HEALTHY LUNCH RECIPES ROASTED VEGETABLE COUSCOUS
This cooked vegetable couscous is simple and fast to form and you will be obtaining a healthy serving of your 5-a-day. Peppers, courgettes and tomatoes bring lots of flavour to couscous - that could be a healthy different to food or rice.
Ingredients for HEALTHY LUNCH RECIPE ROASTED VEGETABLE COUSCOUS
- one red pepper, deseeded and shredded
- one yellow pepper, deseeded and shredded
- two courgettes, sliced
- one massive red or sliced onions as usual
- 1tbsp edible fat
- 300g couscous
- 450ml reduced salt vegetable stock
- sixteen cherry tomatoes
- Ground black pepper
Method HEALTHY LUNCH RECIPES ROASTED VEGETABLE COUSCOUS
1.Preheat the kitchen appliance to 180°C/350°F/Gas Mark four.
2.Put the peppers, courgettes and onion into a cooking tin and add the edible fat, moving to coat. Roast within the kitchen appliance for 25-30 minutes, turning over once quarter-hour.
3.Meanwhile, place the couscous into a heatproof bowl and add the new stock, stirring to combine. cowl and leave for 10-15 minutes to soak and swell, then stir with a fork to shake up the grains.
4.Remove the vegetables from the kitchen appliance and add the cherry tomatoes and and couscous, stir. Season with some. Season with some pepper. come back to the kitchen appliance for an additional five minutes to serve while hot.
